RECAP: Winter Waters at Pacific Way Cafe

An early adopter in the world of seaweed as a culinary super-ingredient in Oregon, Chef Trever Gilbert has been working with us on seaweed dinners since the conception of Winter Waters back in February of 2023. We always appreciate his culinary creativity and sea veggie advocacy!

For Year Two of Winter Waters, Pacific Way Cafe Executive Chef Trever created a 8-course tasting menu in Gearhart Oregon, highlighting local seafood & sea vegetables which was pescatarian, gluten-free, and dairy-free.

Standout dishes included the Roasted Virginica Oyster with Oonee Searanch uni "butter", crispy garlic, Pacific dulse seaweed, and sunchoke paired with 2022 Dauntless Thud Blanc de Noirs, and Seared King Salmon with dulse-chili jam, pickled dulse, radish, kabocha, and sunchoke, paired with 2017 Cayuse God Only Knows Grenache. Oysters Two Ways: dulse-citrus mignonette / pineapple snow paired with 2021 Sass Sauvignon Blanc

Oregon Dungeness Crab Ceviche: pickled dulse, citrus, watermelon radish, coconut, shallot, papadum

Charred Winter Sea Greens: kelp-miso dressing, furikake, fresh seaweed, local greens, paired with 2022 Sass Albariño

Seared King Salmon: dulse-chili jam, pickled dulse, radish, kabocha, sunchoke, paired with 2017 Cayuse God Only Knows Grenache

Coconut Panna Cotta: dulse-spiced hazelnuts, chocolate, chili, paired with 2015 Mad Violets Dessert Riesling
