RECAP: Galentine’s Day at Tastebud with Nácar Oysters

Chef Maylin Chávez of Nácar Oysters joined Chef Mark Doxtader at Tastebud, in Multnomah Village for a special night of seaweed-centric bites and special dishes including sea-focused pizzas, breads and salads from the team of Tastebud, and raw bar with a Baja twist from Chef Maylin. Bonus: the bar team created a unique as delicious sake-based seaweed martini.

A huge thank you to these two chefs for creating a gorgeous menu highlighting Oregon seafood like Albacore tuna and black cod, as well as Pacific Dulse seaweed.

Nácar Oyster menu offerings:

Pacific Northwest Oysters served with Oregon Seaweed Dulse salsa, limes, serranos

Ceviche Verde, with Oregon black cod, kombu, serrano, tomatillos, cilantro, charred avocado served with tostadas

Oregon Albacore Tostadas, with confit Oregon albacore, kumquat, salsa macha, pickled serrano

Oregon Pink Shrimp Brodo, with avocado, guajillo chiles, shrimp stock

Goat Milk Kombu Ice Cream, with pumpkin seed dulse brittle, citrus zest

Radicchio Caesar, with kale, bread crumbs, parmesan, roasted lemon wedge, garlic anchovy aioli

Winter Waters Margarita Pizza, with dulse, mascarpone, tomato sauce, olive oil

Piscivore Pizza, with clams, fennel, potato, cream, dill mozzarella, pecorino

Vegan Pizza, with dulse, radicchio, kabocha winter squash, tomato sauce

Tastebud began in 1999 under the creative vision and hands of Mark Doxtader. But like most good things, Tastebud is built on a community of friends, family and farmers. The restaurant has recently re-opened for indoor seated dining, having shifted to takeout pizza in 2020. We’re so glad they’re open again!
